I have the exact same processor and have asked myself the same question. Apparently it has to do with VBS hardware virtualization. There are some specific set of features which are not existent in 7th gen Intel processors. This post on reddit gives a better explanation on why it is not supported. I'm in the same situation and also i don't know why ,the only thing i know is that upgrading to a highter processor is very expensive.

Impossible to understand Since Microsoft has created this problem for obviously thousands of people all over the planet, they can supply the desired parts needed. I have the same problem. A pc with only 3 years old and an i cpu 3. A 2, euro pc!!
It didn't pass either. Shame what Microsoft is trying to do. In my opinion it's just to "force" people to buy new computers or processors. There are already videos on youtube where people went around Microsoft and installed Windows 11 on an obsolete pc, and they work without error. So an i doesn't pass, it's at least an anecdote. I sincerely hope that good feeling prevails and Microsoft revises the list. In case you want to install Windows 11 it can be installed either in a supported or unsupported mode.
